Well the start of the school year has kept me busy so I haven't had time to update! Here is the status of the cellar at the moment.
I currently have in secondary fermentation:
2 gal Bartlett pear (grown organically on Pippin Orchard Road)
1 gal apple (hand picked apples from Dame Farm in Johnston)
1 gal wild blueberry (french oak) 13.5 % PA
5 gal wild blueberry 12% PA
Currently aging:
1 gal blackberry
2 gal raspberry
3 gal wild blueberry
1 gal cherry
5 gal apple
Looking ahead, I'm excited for the fact that it is cranberry season and I am planning to start a batch of cranberry soon from fresh cranberries. I tried one as you may have read for the very first wine I made, however, that was from mostly cranberry juice concentrate. This one will be from 100% fresh berries! I will keep you updated!
