5 Gal of Blues

My newest 5 gal batch of wild blueberry has finally finished fermenting and it is deeeelicious!  Now it is time to stabilize and send it down to the cellar for aging.  If all goes well we can be looking forward to enjoying this batch by Christmas.  I'm really hopeful for this one; I think its going to be great.  It has just the slightest hint of french oak to it and a really nice dry fruity character.  It clocks in at 11% ABV so its a nice dry clean wine.

I have sent a bottle of my Raspberry off to be auctioned in a home made wine basket at the Holy Apostles dinner dance so that is exciting.
Also I had ended up bringing a bottle of the Cranberry/White Grape wine I made in Dec. of '08 to New Years eve and it was a huge success!  We tried a bottle of it this past summer when I brought it to ME and it tasted just kinda like a wine cooler and I wasn't too happy with it.  Well, a lot can be said for aging!  The bottle we opened on New Years had evolved quite nicely.  It had a richer body to it and the alcohol had balanced out a bit and it was really nice.

Maybe since today is a snow day I'll work on the blueberry.
